Mensch was named Penn College's Head Men's Soccer Coach in May, 2015.

Mensch and the Wildcats reached new heights during the 2024 campaign as the team boasted an 11-5-3 record and reached the United East Conference quarterfinals. The Wildcats' 11 victories were the most wins in a single-season with Mensch on the sidelines and the team earned its first postseason home playoff game and victory in the DIII-era. Mensch coached five Wildcats to all-conference accolades including senior Tommy DeGeyter who earned first-team recognition and became just the third Wildcat in program history to earn three-or-more all-conference selections. DeGeyter also capped his career with the program's first United Soccer Coaches All-Region IV Second Team, Scholar All-Region Second Team and Scholar All-America Third Team honors, while six more student-athletes were honored on the College Sports Communicatiors All-Academic Team including repeat selections for Cole Catherman, Mason Kostick, Jack Lenosky and Matt Neeson.

In 2023, Mench led the Wildcats back to the postseason as his team finished fifth in the United East Volt Division with a 7-6-3 overall record and 2-3-1 record in divisional play. Mensch guided Tommy DeGeyter to his second United East All-Conference Team selection and six College Sports Communicators Academic All-District Team representatives in DeGeyter, Cole Catherman, Mason Kostick, Jack Lenosky, Matt Neeson and Nathan Schwartz.

Mensch led the Wildcats to the NEAC postseason for the first time in 2017. Penn College reached the semifinals that season and had its first All-NEAC First Team selection. In 2018, the Wildcats reached the conference semifinals for the second consecutive season.

Mensch, a Muncy native, came to Williamsport after serving for four years as the Assistant Men's Soccer Coach at Wilkes University. At Wilkes, Mensch assisted the head coach in recruiting, developing practice plans, scouting reports and game film breakdown. He was also the Assistant Sports Information Director for two years and earned his Masters of Business Administration degree at Wilkes.

Mensch was an outstanding soccer player at Misericordia, where he graduated in 2009 with a degree in Sports Management and Marketing.  As a player at Misericordia, Mensch earned All-Freedom first team honors and was a second team NSCAA/Adidas All-Region Forward as a senior.  As a junior Mensch was named first team All-PAC and a third team NSCAA/Adidas All-Region Forward and was also named third team All-Region forward by D3kicks.com. Mensch was inducted into the Misericordia Athletics Hall of Fame in 2020.

An outstanding student in the classroom, Mensch was named to the NSCAA/Adidas Scholar All-Region First Team during both his junior and senior year. He was named to the Dean's List all four years while being recognized as a Misericordia University Scholar Athlete.
